Fish Tacos featuring


• Hayes Handmades BBQ Rub
• Fresh Cod Loins (Can use frozen)
• Canola Oil (or comparable)
• Chihuahua Cheese Shredded
• Fresh lime slices
• Fresh Avocado
• Cilantro
• Shredded lettuce or cabbage
• Red onion
• Diced Tomato
• Corn Tortilla Shells
• Sour Cream

Cover cod in Hayes Handmades BBQ Rub and let sit for 30 minutes to absorb the spices. Cut vegetables and prepare onion while your cod is marinating. Prepare onion by cutting in half, then slice into thin pieces and put into a shallow bowl. Squeeze half of a lime and sprinkle a little Hayes Handmades Chef’s Blend over the onions and toss. Let onion mixture marinate for 30 minutes.  
Preheat oven to 350 degrees
Add oil to a hot pan (enough to cover bottom of pan), let heat until you see it lightly smoke. Sear the fish on both sides (around 1 minute on each side). Remove the fish pan place and on a baking sheet. Place in oven to finish (around 10 minutes or until fish is flaky). Pull from oven and they are ready to serve.
To build your tacos start by warming your shells up either in the oven or for 30 seconds in your microwave. In your shells, add cheese, then your fish and top with lettuce, tomato, avocado, sour cream, cilantro, red onion, and finish with a squeeze of lime.
